If you computer can handle minecraft well you can always just capture the application and alt-tab back and forth to check obs. Or play in windowed mode. Just be sure not to us monitor capture.
If you have an Nvidia GPU that is in the 700 series or higher, you can use Shadow Play to record virtually lag free and care free (to some extent.
