    So I logged on to the server to see that my Nether Dragon was killed and that my farm had been raided

    This horrific event must have occurred between 5:00 PM last night and 3:00 PM today.

    This occurred near -1575 x and -3742 z.

    Thanks in advance for investigating.

    (P.S The land that the farm is on isn't claimed simply because you can only get 100 claim blocks per day)

    The player got a tempban and your claim is big enough to move your farm in the claim.

    with a playtime of about 3 hours a day you can get more than 250 claimblocks which is about a chunk each day.
