I don't think we are going to add a 1.16.5 or other drop-down until we can use plugins with moded. I am going to deny this for the simple fact that we have already had an Enigmatica 6 server. I believe it was the first modded 1.16 we hosted.
If it helps for future suggestions, 1.16.5 wise, we have had Enigmatica 6, All the Mods 6, Stacia Expert, and currently Life in the Village 2.
