afaik they do spawn in overworld, but that would make them kinda limited as i havent seen lots of them
if you go south from spawn (x: 185, z: 450) you'll find a public villager spawner, where you can sit and wait for beekeepers

they are probably disabled to "balance" the pack or because they are buggy.
i've placed a villager spawner straight south from spawn (x: 185, z: 445) if someone provides me with 2 unbroken spawners, i could setup the same...
it actually isnt blocked or claimed or whatever, and staff has to deal with more serious bugs.
theres at least one stronghold with an active endportal. and i've found it using vanilla mechanic with ender eyes [spoiler]

yea, but like zero mobs. spent hours to find an enderman and getting a ghast seems to be impossible -.-
flax and canola is at least in villages, black quartz can be crafted. no idea about coffee/rice
